Crystallum is a boutique wine producer located in the Hemel-en-Aarde Valley, near Hermanus in the Western Cape of South Africa. The winery was founded in 2007 by brothers Andrew and Peter-Allan Finlayson, who come from a long line of winemakers in South Africa. The name "Crystallum" was inspired by the quartz crystals that are found in the shale soils of the region.
The Finlayson brothers focus on producing terroir-driven wines that showcase the unique characteristics of the Hemel-en-Aarde Valley. They work with a range of grape varieties, including Chardonnay, Pinot Noir, Syrah, and Grenache, and their winemaking philosophy is centered around minimal intervention and letting the vineyard express itself.
