Abbazia di Novacella combines age-old traditions with modern vinification techniques to create wines that are both elegant and complex. The monastery's vineyards are located on hills between 600 and 800 meters above sea level, where grapes thrive in the unique climate of South Tyrol.
The winery focuses on cultivating native grape varieties such as Pinot Grigio, Gewürztraminer, Sylvaner and Schiava. In addition to these classic varieties, they also experiment with lesser-known grapes such as Lagrein and Kerner.
Abbazia di Novacella is committed to sustainable viticultural practices. They use natural vinification techniques, minimize the use of pesticides and herbicides in the vineyards and promote biodiversity.
