Domaine Weinbach Riesling Schlossberg Grand Cru Sainte Catherine

Weinbach Riesling Schlossberg Grand Cru is bright golden yellow in color. Expressive aromas of grapefruit, ripe pear and Virginia tobacco on the nose. In the taste palette candied citrus fruits, tropical fruit, something of acacia honey and an obvious minerality. The aftertaste is intense and is accompanied by refined nervous acidity.

The grapes are picked by hand, with very strict selection for perfect ripeness. In the vinification cellar, after an extremely slow and careful pressing of the grapes, a spontaneous alcoholic fermentation with wild (grape-like) yeasts takes place in old very large oak casks. The wines remain in this at least until June or July to slowly reduce the fermentation in order to express authenticity and complexity to the maximum in this way. This entire process takes place entirely according to strict biodynamic rules and regulations.

This Riesling wine is delicious as an aperitif with oysters, lobster, sea fish such as sole and turbot, turkey and Bresse chicken with mushrooms, sushi and sashimi.
