Terre Cevico b.IO Nero d'Avola Cabernet is bright, deep ruby red in color. In the nose aromas of ripe strawberries, blue plums and some spices. On the palate tones of ripe small red-black fruit, figs and again a light spiciness, which in the aftertaste are accompanied by ripe tannins and mild acids.
At the beginning of September, the Nero d'Avola grapes and Cabernet Sauvignon grapes are harvested separately, after which they are subjected to temperature-controlled (24°C) alcoholic fermentation in stainless steel tanks in the vinification cellar for 10 days after crushing. Then the grapes are pressed and the young wine is transferred to clean stainless steel tanks for malolactic fermentation and maturation. After 6 to 8 months, the wine is assembled and bottled under completely sterile conditions after a light filtering. This entire process follows strict organic rules and regulations.
