Terre Cevico b.IO Catarratto Chardonnay

Terre Cevico b.IO Catarratto Chardonnay is clear, light golden yellow in color. In the nose aromas of citrus fruit, nectarines, peach and wild herbs. In the taste palette notes of mandarin, ripe yellow stone fruit and subtle spice, which are accompanied by a fruity aftertaste with mild acids.

At the end of August, the Catarratto and Chardonnay grapes are harvested and vinified separately. In the vinification cellar, the grapes are immediately pressed pneumatically and the juice is subjected to a temperature-controlled (16°C) alcoholic fermentation with wild (grape's own) yeasts in stainless steel tanks for 14 days. The wine is then transferred to clean stainless steel tanks for malolactic fermentation and aging on the 'lie'. After about 6 months, the wine is assembled, lightly filtered and bottled under completely sterile conditions. This process takes place entirely according to biological rules and regulations
