Italian Prosecco is a sparkling wine made in the Veneto region of Italy. It is made from the Glera grape variety and is usually produced using the Charmat method, which is a faster and cheaper method compared to the traditional method used for Champagne and Cava.
The production process starts with the harvesting and pressing of the Glera grapes. The juice is then fermented in stainless steel tanks under controlled temperatures until it reaches the desired alcohol content. During this process, a second fermentation takes place in the tank, where yeast and sugar are added to create the carbonation that gives Prosecco its signature bubbles.
After fermentation, the wine rests in the tanks for several months to allow the flavors to develop. Prosecco can be made in a variety of styles, from bone dry to sweet, with the most popular being the extra dry and brut varieties.
Prosecco is a versatile wine and is often served as an aperitif or in combination with light meals, such as seafood, salads or fruit. It is also a popular ingredient in cocktails such as Bellini and Aperol Spritz.
