Champagne is produced using a process called méthode champenoise, or traditional method, which involves a second fermentation in the bottle. After the initial fermentation, a mixture of sugar and yeast is added to the wine, which is then bottled and aged. During the second fermentation, carbon dioxide is produced, which is trapped in the bottle, creating the signature bubbles of Champagne.
