The color is bright yellow with a green hint. A striking and aromatic intensity with refined citrus notes such as pink grapefruit, meeting white fruit and subtle hints of fresh herbs. 100% of the grapes come from plot No. 7 of the San Pablo Estate, located at 1,500 meters above sea level in the Uco Valley. Sauvignon Blanc grapes, clone 242, were planted in 2002 on a rootstock P1103 with a density of 5,500 plants per hectare. The cold climate together with the stony soil with sandy loam texture result in a unique wine with personality and expression of terroir. Plot No.7 was harvested on March 20, 2015.
The grapes are picked by hand on the San Pablo estate. The maximum precautions have been taken to protect the fruit from oxidation, followed by the inert gas protection method. Gentle removal of sediment and cold pre-fermentation at 0 degrees Celsius. An active yeast is used for the fermentation of the must (fermentation) that is especially suitable for Sauvignon Blanc, this is done at a temperature of 12/14 degrees Celsius. After fermentation, the wine remains in contact with the lie for another eight months, giving you richer tones in the wine. The modest presence of acids give the wine freshness and length with a nice lingering aftertaste.
This wine is delicious as an aperitif and great to combine with culinary fish dishes, such as turbot and sea bass.
