Pratello Ottocento is bright straw yellow in color with elegant greenish reflections. A great wine with a fine aromatic character, both floral and fruity, with typical hints of almond shavings, pear, wild flowers and acacia. In the mouth, the attack is round and velvety, moderately acidic, dry and well structured. The finish is incredibly persistent and is characterized by the typical and unmistakable hint of bitter almond that is typical of the Tuchí grape (Tokaj).
The grapes come from 80-year-old vines, on the southern side of Lake Garda, called Tuchì, a wine that gives off a pungent aroma. Silky, mineral, crunchy when young, fleshy and round when aged. Here, harvesting is done manually, followed by gentle pressing of the entire truss in a nitrogen-saturated atmosphere. Maturation sur lie takes place for 7 days, alcoholic fermentation for 16 days. This is followed by aging in steel tanks on the lees for 6 months and in the bottle for 4 months.
Perfect to drink with San Daniele ham, shellfish, asparagus, risottos and omelettes.
