Pounamu Special Selection Sauvignon Blanc

Pounamu Special Selection Sauvignon Blanc has a clear light straw yellow color. In the nose aromas of grapefruit, passion fruit, and something of dried basil and something of boxwood. In the taste palette notes of lime, mango and gooseberries, which are accompanied by a juicy aftertaste with soft fresh acids.

The grapes from our own vineyards are mechanically harvested at the early cool dawn in order to transport the grape bunches as quickly as possible to the vinification room and to avoid any oxidation. There the grapes are immediately destemmed, pressed very gently and the juice is allowed to rest so that the coarser components can settle. After this, the clean juice is transferred to large stainless steel tanks to undergo the alcoholic fermentation with wild (grape own) yeasts for more than two weeks, temperature controlled (max 14°C). Subsequently, the young wine undergoes a further maturation period on the fine lees without the malolactic fermentation taking place, in order to maintain optimal freshness and aromas. After a few months, the assembly follows and the wine is bottled after a light filtering.
