Pounamu Special Selection Pinot Noir

Pounamu Special Selection Pinot Noir has a bright light ruby ​​red color. In the nose aromas of plums, raspberries, roses, herbs and a smoky touch. In the taste palette notes of ripe small red fruit, something of fresh mushrooms and subtle spiciness, which are accompanied by an elegant aftertaste with soft tannins and fresh acids.

The grapes from our own vineyards are harvested partly mechanically and partly by hand at early cool dawn in order to transport the grapes as quickly as possible to the vinification room and to avoid any oxidation. There, the grapes are immediately destemmed, lightly bruised and soaked for a few days cold (10°C) to obtain more color and aromas. The must is then transferred to large stainless steel tanks to undergo temperature-controlled alcoholic fermentation with wild (grape) yeasts for over two weeks. This is followed by pressing and the young wine is transferred to French used oak barriques for malolactic fermentation and maturation. After about 12 months from the harvest, the wine is assembled and bottled after very light filtering.

Delicious red wine that goes well with lamb from the oven, grilled duck breast, pork tenderloin, risotto with mushrooms and not too ripe cheeses such as citeaux and morbier.
