After the manual grape harvest, the grapes are selected, destemmed and vinified separately. The grapes are partly heated very briefly and quickly to 80°C and immediately cooled to 20°C, after which they undergo a temperature-controlled alcoholic fermentation with wild (grape's own) yeasts on large cement cuvées for two weeks with the rest of the grapes. . Then the grapes are pressed and the young wine transferred to stainless steel tanks and large wooden casks to undergo and mature malolactic fermentation. After 6 months, the wine is bottled after light filtration. This entire process takes place according to biological and/or biodynamic rules and regulations as far as possible.
