The different grape varieties are picked by hand and gently pressed separately. When 55% of each grape variety has been pressed, only this highest juice quality is used for the further process! After the temperature-controlled fermentations, which also take place separately on stainless steel, at 16 to 18 degrees, a blend is composed of the different grape varieties. This is then bottled and receives its second fermentation in the deep cellars of the domain. Both fermentations use their own native yeast culture. After a maturation of 15 to 18 months, the disgorgement follows and the settled yeast is removed from the bottle so that a beautiful clear Cava can be served.
Ideal as aperitif or tapas like olives, cheese, raw ham, shrimps or oysters.
