Paxton MV Shiraz is a refined wine from the renowned McLaren Vale region in South Australia. This region is known for its excellent conditions for wine growing, with a Mediterranean climate that ensures warm days and cool nights. Founded in 1979 by David Paxton, the Paxton winery stands for innovative and sustainable wine growing methods. Paxton uses biodynamic principles, which means they use natural and environmentally friendly techniques when growing their grapes.

This Shiraz is made from 100% Shiraz grapes that are carefully selected from various Paxton vineyards in McLaren Vale. The grapes are picked by hand to ensure that only the best fruit is used. After harvest, the grapes undergo a fermentation process in stainless steel tanks, followed by maturation in both new and used French and American oak barrels. This combination of oak provides a complex flavor and aromatic depth to the wine.

The Paxton MV Shiraz has a deep ruby red color that immediately attracts attention. The nose reveals intense aromas of dark fruit such as plums and blackberries, together with subtle hints of spices, chocolate and a hint of vanilla from the oak. When tasted, the wine reveals a full, rich flavor with layers of ripe black fruit, dark chocolate, and spices such as pepper and cloves. The tannins are firm but well integrated, providing a silky texture and a long, lingering finish.
