Billecart-Salmon is a French champagne house founded in 1818 by Nicolas François Billecart and Elisabeth Salmon in Mareuil-sur-Ay, a village in the Champagne region of France. Today, the house is still owned and operated by the Billecart family, and is known for its high quality and refined champagnes.

Billecart-Salmon produces a range of champagnes including brut, rosé, and vintage varieties. Their signature cuvée is the Brut Réserve, a blend of Chardonnay, Pinot Noir, and Pinot Meunier, which is aged for at least three years in the cellars before release. The house also produces a highly-regarded rosé champagne, made from a blend of Chardonnay, Pinot Noir, and Pinot Meunier grapes, and aged for a minimum of three years.

Billecart-Salmon is known for their commitment to traditional champagne-making techniques, including a long aging process and minimal dosage (the addition of sugar to the wine before bottling). This dedication to quality has earned the house numerous awards and accolades over the years, and has made Billecart-Salmon one of the most respected champagne producers in France.
