Montenidoli Il Templare is a blend of original Tuscan white grape varieties, Vernaccia, Trebbiano Gentile and Malvasia Bianca. Fermented in wood, this makes a fresh, elegant and complex wine, with a whole palette of flavors passing by. Oily sultry start that then combines a wild herb garden with citrus fruit, lots of minerality and a wonderfully long aftertaste with refined bitters. What a glory, those Templars knew it.
This wine has a very complex, ripe nose of citrus fruits, wild herbs and a 'kiss' of the wood. Fat and warm in the start, fresh, elegant and mineral in the mouth, delicate finish with a pleasant light bitter aftertaste. The entire vegetative cycle of the vines is monitored extremely carefully to produce only fully ripe grapes of the best quality. The bunches are picked by hand and transported in small boxes. Upon arrival in the cellars, the grapes are destemmed, cooled and soaked. The temperature and duration of both alcoholic and malolactic fermentation are permanently controlled. Il Templare is made from all white grapes that can still be found in the old vineyards of the domain. It is fermented in wood and aged in the same way as the mass wine of the ancient Templars of Montenidoli.
All nine wines from Montenidoli are renowned within and outside Italy. When the prestigious '3 bicchieri' from Gambero Rosso was awarded in 2006, the accompanying motivation was as follows: “These wines speak the language of their terroir. They are completely different from the rest, with their classic smell and taste, not always easy, but truly unique”
Montenidoli Il Templare goes well with salmon, eel, stockfish, clipfish, tuna, sweet and sour and/or fried dishes.
