Merlin Pouilly Fuissé Sur la Roche

Merlin Pouilly Fuissé Sur la Roche, a French Burgundy wine, is bright light golden yellow in color. In the nose lively aromas of lime, white peach, candied pineapple, white flowers, brioche and almonds. The taste palette shows notes of grapefruit, ripe yellow stone fruit, some orange peel and vanilla, which are accompanied by a clear mineral aftertaste with refined acids.

It is a Premier Cru wine, which means that the grapes come from selected vineyards that are among the best within the appellation.

Sur la Roche is a vineyard located on a steep slope with a soil rich in limestone. This unique soil contributes to the distinctive character of the wines that come from this vineyard. The wines are typically elegant, complex and expressive, showcasing the classic characteristics of Chardonnay from this renowned region.

The grapes are picked by hand with a very strict selection. The grapes are gently pressed pneumatically in the vinification cellar, after which the juice rests for 12 hours to allow coarser components to settle. Subsequently, a spontaneous alcoholic fermentation with wild (grape's own) yeasts is allowed to take place under temperature control, on oak barriques (15% of which are new every year), followed by malolactic fermentation and maturation on the groins in the same barriques. After 18 months, the wine is assembled, lightly filtered and bottled.

Delicious as an aperitif, goes well also with fish in creamy sauce, dishes with poultry and asparagus dishes.
