Marc Morey Chassagne-Montrachet Rouge has a beautiful deep red color. An expressive nose with aromas of ripe red fruits (cherries, sour cherries, raspberries, currants) and elegant wooden tones. In the mouth fresh, elegant, fruity and generous, broad and fleshy, with a good balance between the fruit, the acid, the wood and the melted tannin's.

The manually picked grapes are double checked, in the vineyard and on arrival in the wine cellar. Fermentation takes place in open vats under strict temperature control, where the shell cake is regularly dipped and trodden. The entire process of soaking and fermentation takes 12 days. The young wine is aged for 15-18 months in one-year-old oak barrels, after which it is bottled.

Wine - Food pairing

Classically recommended with grilled or oven-fried lamb meat, grilled or roasted pork fillet, grilled poultry and feather wild.

Rigor and respect for the terroir are the watchwords of the estate. The vines are pruned in simple guyot or cordon de Royat. Disbudding is severe for optimum yield, green work is rigorous, leaf stripping of red plots is systematic. The soil is worked throughout the year. For several years, the estate located in Chassagne Montrachet near Beaune in the department of Côte-d'Or has entered into a reasoned control approach, the treatments are positioned at the best times and only if they are absolutely necessary.

Respect for the environment is an important element to take into consideration. The vinifications are flexible, adapted to each vintage, aging on lees lasts 10 months for white wines and 15 months for red wines with 25 to 30% new barrels to allow a better expression of the terroirs. The filtration is gentle and depends on the clarity of the wines. The estate wines play the card of finesse, freshness and minerality, more than opulence.
