Maison Centaurée Pinot Noir is a red wine from Languedoc, France. The wine is made from the Pinot Noir grape, which is known for its delicate aromas and flavors. This wine has a light ruby red color and a complex nose with aromas of red cherries, raspberries and a light touch of vanilla.

Maison Centaurée Pinot Noir has a light to medium body with a good balance between fruit and acid. The wine is elegant and refined on the palate, with a long and pleasant aftertaste.

The malolactic fermentation takes place in wooden barrels, which creates more complexity. The Pinot Noir then matures for 10 months, 90% in used wooden barrels and 10% in new wooden barrels. These casks are made by a Burgundian tonnelier.

Maison Centaurée

The winery is named after the Centaurée, the French word for cornflower. This rare, protected flower is scattered in remote places in Minervois and at the foot of the Pyrenees, as well as in the winery's vineyards. Maison Centaurée honors this small wildflower and tailors its agricultural methods to its conservation. Their aim is to give the wines the same generous nature as that of the Centaurée flower; the passionate winemakers make it a sport to match the flavor profiles of Burgundy wines.

In 1995, Laurent and Catherine Delaunay, originally winemakers from the Burgundy region, started making wines from regions such as the Rhône, Provence and Languedoc under their own flag.

The vineyards are located around the towns of Beziers and Carcassonne. All grapes are picked manually, which guarantees quality. The vines have an average age of 20-25 years old and grow in rich terroir. After picking the grapes, (long-term) ripening follows, according to the “Sur Lie” method and in oak barrels.
