Maison Centaurée Chardonnay is a white wine from Languedoc, France. The wine is made from the Chardonnay grape, which is known for its versatility. The wine has a beautiful golden yellow color, a complex nose with aromas of ripe fruit, such as peach, apple and pineapple, and notes of vanilla and butter.
This Chardonnay wine has a full, rich taste with a good balance between fruit and acid. The wine is creamy and soft on the palate, with a long and pleasant aftertaste.
The Chardonnay from Maison Centaurée is matured in wood. 40% is matured on new wood, 30% on 1 year old wood and 30% on 2 year old wood. The wine then matures for 9 months 'sur lie' during this period the yeast cells are stirred through the wine, this method is called 'battonage'. This gives the wine more body and roundness.

Maison Centaurée
The winery is named after the Centaurée, the French word for cornflower. This rare, protected flower is scattered in remote places in Minervois and at the foot of the Pyrenees, as well as in the winery's vineyards. Maison Centaurée honors this small wildflower and tailors its agricultural methods to its conservation. Their aim is to give the wines the same generous nature as that of the Centaurée flower; the passionate winemakers make it a sport to match the flavor profiles of Burgundy wines.
In 1995, Laurent and Catherine Delaunay, originally winemakers from the Burgundy region, started making wines from regions such as the Rhône, Provence and Languedoc under their own flag.
The vineyards are located around the towns of Beziers and Carcassonne. All grapes are picked manually, which guarantees quality. The vines have an average age of 20-25 years old and grow in rich terroir. After picking the grapes, (long-term) ripening follows, according to the “Sur Lie” method and in oak barrels.
