Maison Centaurée Cabernet Merlot

Maison Centaurée Cabernet Merlot is a red wine from Languedoc, France. The wine is made from a blend of Cabernet Sauvignon and Merlot grapes. The wine has a dark red color and an intense nose with aromas of blackcurrants, blackberries, cassis and a light touch of vanilla.

Maison Centaurée Cabernet Merlot has a full, rich flavor with a good balance between fruit and acid. The wine is tannic and firm on the palate, with a long and pleasant aftertaste.

This blend of 70% Cabernet Sauvignon and 30% Merlot undergoes a long skin maceration. 20% of the Merlot grapes are fermented in their entirety, so more fruit notes are extracted from the grapes. The grapes are then stored in wooden barrels for malolactic fermentation. The blend is then aged in wood for 10 months.

Maison Centaurée

The winery is named after the Centaurée, the French word for cornflower. This rare, protected flower is scattered in remote places in Minervois and at the foot of the Pyrenees, as well as in the winery's vineyards. Maison Centaurée honors this small wildflower and tailors its agricultural methods to its conservation. Their aim is to give the wines the same generous nature as that of the Centaurée flower; the passionate winemakers make it a sport to match the flavor profiles of Burgundy wines.

In 1995, Laurent and Catherine Delaunay, originally winemakers from the Burgundy region, started making wines from regions such as the Rhône, Provence and Languedoc under their own flag.

The vineyards are located around the towns of Beziers and Carcassonne. All grapes are picked manually, which guarantees quality. The vines have an average age of 20-25 years old and grow in rich terroir. After picking the grapes, (long-term) ripening follows, according to the “Sur Lie” method and in oak barrels.
