Hajszan Neumann Natural Grüner Veltliner has a deep dark yellow color. In the nose aromas of elderberry, apple, nutmeg, lychee and some white pepper. In the taste palette notes of yellow plums, dried apple and a hint of orange peel, accompanied by a slightly chalky finish with elegant acidity and some tannins.
In the course of September, the grapes are picked by hand with a very strict selection. In the vinification cellar, the grapes are lightly crushed, after which a temperature-controlled spontaneous alcoholic fermentation with wild (grape's own) yeasts is allowed to undergo in stainless steel tanks. Subsequently, the young wine with grape skins and pulp is transferred to clean stainless steel tanks for malolactic fermentation and maturation. After about four months, a very gentle pressing follows and the wine is again transferred to clean stainless steel tanks to mature for six weeks. After this, the wine is bottled without the use of sulphur, fining or filtering. This entire process takes place entirely according to biodynamic rules and regulations. This 'orange wine' has been vinified entirely without the use of sulfur.
