Lavaux Saint-Jacques wines are very colorful, with great aromatic richness. They are powerful without too much structure but with a great length on the palate in which elegance and fruitiness are expressed.
Lavaux Saint Jacques is certainly one of the most famous places in Gevrey-Chambertin. The vineyard faces south, southeast, planted on the rock with about eight inches of pebbles and clay soil. It is a very special microclimate, very hot during the day, cold at night, the Combe de Lavaux is very close. The vines on the plot are already old, about 70 years old. They are often harvested last because the grapes take longer to ripen despite a very long exposure to the sun, the freshness of the night is no stranger to this. The vinification is traditional: manual harvest, cold maceration then fermentation using native yeasts, 18 months aging in oak barrels, 50% of which are new wood from Tronçais.
Gevrey-Chambertin 1er Cru Lavaux Saint Jacques is considered one of the best Premier Cru vineyards in the Gevrey-Chambertin appellation, and the wines produced from this vineyard are highly sought after by collectors and wine enthusiasts around the world.
