Recently, Dr. Loosen two non-alcoholic wines from a Guts Riesling with residual sweetness. Both products could be dealcoholised with the base wine selected by Loosen without the addition of sweet reserves, allowing for a natural and harmonious taste. An exciting alternative to non-alcoholic enjoyment.
All wines undergo the same vinification: fermentation with wild yeast cells, aging for 10 months in stainless steel tanks and wood, no fining. The wines all have an excellent balance between the basic components of a wine: sugar, acid, alcohol and phenols. In their youth, the balance will not yet be perfect, this is only achieved with the dry wines after at least two years of patience. More time is needed for sweet wines: 10 years for the auslese, 15 years for the auslese with a golden capsule, 20 years and more for the beerenauslese and trockenbeerenauslese. The wines, dry or sweet, from the 'Schiefer terraces' ripen a little faster than those from single vineyards.
