Then follows pressing and the juice is allowed to undergo a spontaneous alcoholic fermentation with wild (grape's own) yeasts in a stainless steel tank, in a temperature-controlled manner, in which the wine also ripens on its fine 'lie' without being crossed. The wine is assembled after about 12 months and bottled unclarified and unfiltered.
