Weinbach Les Vignes du Prêcheur has a bright light yellow color. The nose has aromas of lime, ripe pear, white peach, apricots and wild flowers. In the taste palette notes of lemon zest, yellow stone fruit and a hint of papaya, which are accompanied by a slightly salty aftertaste with fresh acidity.
The grapes of Les Vignes du Prêcheur (the preacher's vineyard) come from a vineyard located right below the grand cru vineyard Kaefferkopf. The bunches of grapes are picked by hand very selectively at optimal ripeness. In the vinification cellar, the bunches are squeezed in their entirety with extreme care and the juice is left to rest in a cool place to allow the coarser ingredients to settle. Subsequently, the clean juice is crossed on large oak casks to undergo a spontaneous alcoholic fermentation with wild (grape-native) yeasts. The young wine is then transferred to large barrels for malolactic fermentation and a maturation period in the groin. After about eight months, the wine is assembled and bottled without clarification or filtering. This entire process takes place entirely according to strict biodynamic rules and regulations.
