This Syrah wine, from a classic southern French grape variety, is made from low yielding vines over 20 years old, giving the wine its intense flavours. The wine matured in oak for 8 to 10 months. This wine has bold and spicy characteristics with aromas of black pepper and wild herbs that developed complex notes of leather and tobacco through aging in oak.

An old wine producer, which has been producing wine since Roman times, is beautifully situated near Pezenas, Languedoc. Located a few kilometers from the Mediterranean Sea, Domaine Saint Hilaire enjoys a sunny climate, but is protected by the sea from extreme temperatures.
The vines make clever use of the advantages of the diverse terroir. The vines on the stony plateau supply the grapes for the intense reds and the vines in the more fertile valley supply the grapes for the lighter whites and rosés.
The philosophy is to let nature express the qualities of the terroirs and vines in a natural way with low yields (approx. 35 ha/hl) and largely organic methods. They are aided in these goals by the famous southern French winds, the Mistral, Tramontane and Marin which gently air the vines, keeping disease at bay and reducing the need for treatments. A mix of manual harvesting and the latest technology ensures that the precious grapes are delivered to the winery in perfect condition.
