The vineyards of Domaine des Hâtes benefit from a terroir of Kimmeridge clay and limestone soils, which give the grapes their distinctive mineral character. The grapes are harvested by hand and then vinified with care in stainless steel tanks. The wine then matures in stainless steel tanks to preserve the freshness and purity of the fruit.

The cellars of Domaine les Hâtes are located on the slope of a hill in the village of Maligny. Gravity is used to move the grapes, must and wine. All wines undergo malolactic fermentation, which makes the wines rounder and softer. In the vineyards too, the focus is on working as naturally as possible. The vineyards are currently still in conversion to organic certification.
