Saint-Véran Les Cornillaux reveals a light smokiness on the nose, then exhales delicate floral notes of acacia and fern, with an evolution on ripe fruit. Clear ripe tones of white and ripe fruit, vanilla due to the wood aging and a rich full taste.
This wine comes from one of the most beautiful plots in the Saint-Véran appellation called Les Cornillaux, located at the entrance of the village of Leynes. Loamy and calcareous limestone soils are characteristic of the appellation.
Aged for 18 months on the lees then re-mashed before bottling, no fining (suitable for vegans) and very light filtration before bottling (may have a slight tarnish).
The barrels used are high quality barrels, the wood has dried for 36 months (versus 24 months on average), the heating is very slow and gentle to support the wine and not to make up for it.
Fermentation in oak barrels using native yeasts (100% oak barrels, of which about 50% are new barrels).
Age of the vines: Average 55 years
This wine is delicious with freshwater fish, crustaceans, pâtés and terrines and snails.

Domaine des 3 Dames is a name that has recently been buzzing around in the Pouilly-Fuissé appellation: Simon Ravaud and his very young Domaine des 3 Dames. Simon manages a winery of about 6.5 hectares in the village of Solutré, in the shadow of the famous Roche. He started in 2014, with plots that he was allowed to use belonging to 3 different ladies, hence the name. A little bit of Mâcon-Solutré, Saint Véran and especially Pouilly-Fuissé.
