This Saint-Véran reveals a slight smokiness on the nose, then exhales delicate floral scents of acacia and fern, with an evolution on ripe fruit. On the palate, we note a pleasant roundness with aromas of citrus and vanilla, all enhanced by a nice minerality. Well balanced, structured and generous, this wine has a refreshing finish.

Domaine des 3 Dames Saint-Véran has a bright, light golden color. Toasty aroma of toast, slightly lemony, vine peach, small floral note of eucalyptus type, minerality typical of Saint-Véran. In the mouth a full wine, oily, fresh and harmonious aftertaste.

The vineyard covers 3.5 hectares between Leynes and Chasselas. The wines produced come from plots with loamy soils, with calcareous limestone typical of the terroirs of the Saint-Véran cru. These limestones give particularly floral wines with a characteristic sober minerality and a very fresh finish on the palate.

Vinification

This wine was aged on the lees for 11 months then re-mashed before bottling, no fining (suitable for vegans) and very light filtration before bottling (may have a slight tarnish). Fermentation took place in oak barrels using indigenous yeasts (100% oak barrels, of which about 25% are new barrels). Age of the vines: Average 55 years.

Domaine des 3 Dames Saint-Véran is delicious as an aperitif or with crustaceans and shellfish, fish, veal and pork, with poultry such as chicken, turkey, guinea fowl and domestic duck and with creamy white mold cheeses.
