Domaine des 3 Dames Pouilly Fuissé has a clear, light golden color. Flavors of buttered pineapple, lightly grilled, very mineral. In the mouth rich, fat, juicy, full of fruit, very long with a nice salt content. Buttered and toasted at the end. All plots for this wine are located in the municipality of Solutré-Pouilly. The vines get their minerals from the depths of the marl of old entroque limestone, the same limestone that forms the Roche de Solutré. The resulting wines develop a clever blend of aromas of exotic fruits and minerals.

Pouilly-Fuissé is a wine appellation in the Mâconnais sub-region of Burgundy, France. The appellation produces white wines made from Chardonnay grapes and is known for its rich, full-bodied wines with complex flavors and aromas. Pouilly-Fuissé wines are typically characterized by their aromas of citrus, pear and honey, with subtle notes of oak and minerals. On the palate they are full bodied with flavors of ripe fruit, butter and a hint of spice, with a rich, creamy texture and a long, smooth finish.

Vinification

This wine was aged on the lees for 11 months then re-mashed before bottling, no fining (suitable for vegans) and very light filtration before bottling (may have a slight tarnish). Fermentation took place in oak barrels using indigenous yeasts (100% oak barrels, of which about 25% are new barrels). Age of the vines: Average 50 years.

Delicious wine suitable as an aperitif or with shellfish, fish, veal and pork, with poultry such as chicken, turkey, guinea fowl and domestic duck and with creamy white mold cheeses.

Domaine des 3 Dames is a family winery located in the Pouilly-Fuissé appellation. The winery is known for its high-quality Chardonnay wines, which are made using sustainable agricultural practices and traditional winemaking techniques. Located in the village of Solutré-Pouilly, in the south of Burgundy, and at the foot of the majestic Roche de Solutré, the vineyard now extends over 7 hectares from Solutré-Pouilly to Pruzilly.

The name of the Domaine "des 3 dames" is first of all a beautiful tribute to the three sisters who own the vineyards of the domain and who have enabled Simon to realize his dream of becoming a winegrower in the country that saw him grow up.

Secondly, the number 3 stands for the 3 appellations they started cultivating: Mâcon Solutré-Pouilly, Saint-Véran and Pouilly-Fuissé.
