Pouilly-Fuissé Les Crays is a specific vineyard location in the Pouilly-Fuissé appellation in Burgundy, France. The wines from this vineyard are known for their exceptional quality and unique character. Pouilly-Fuissé Les Crays wines are made from Chardonnay grapes and are typically characterized by their aromas of citrus, tropical fruits and white flowers, with subtle notes of oak and minerals. On the palate they are full bodied with flavors of ripe fruit, honey and a hint of spice, with a rich, creamy texture and a long, smooth finish.

Vinification

This wine was aged on the lees for 18 months then re-mashed before bottling, no fining (suitable for vegans) and very light filtration before bottling (may have a slight tarnish). The barrels used are high quality barrels, the wood has dried for 36 months (versus 24 months on average), the heating is very slow and gentle to support the wine and not to make up for it. Fermentation in oak barrels by indigenous yeasts (100% oak barrels, of which about 75% are new barrels).

This wine is delicious as an aperitif or with shellfish, fish, veal and pork, with poultry such as chicken, turkey, guinea fowl and domestic duck and with creamy white mold cheeses.
