Irancy, in the north of Burgundy, just below Auxerre, is a small, very special appellation: on a soil very similar to that of Chablis, César, an ancient, red-fleshed grape variety, is still planted here. A real Irancy is based, as usual in Burgundy, on Pinot Noir, but also contains a portion of César, which gives the wine more colour, spiciness and spice.
The wine has a purple-ruby red color. The scent is wild, earthy and fruity, (blackcurrant and cherry). The taste is velvety in texture with fine, soft tannins. Its high acidity allows it to ripen well, up to 5-10 years after harvest.
Domaine de Mauperthuis Irancy goes well with a variety of dishes. This wine can be served with grilled poultry, lamb chops, casseroles, and even mushroom dishes.

The Domaine de Mauperthuis extends over forty hectares of vineyards around Chablis. They adhere to smaller yields, use natural yeasts for fermentation, treat their grapes with great care and are very moderate with the use of sulfites. All this to reinforce their philosophy of 'working with respect for the terroir and the environment'.
Marie-Noëlle & Laurent Ternynck have been making impressive wines for 20 years at their small Domaine de Mauperthuis, which is located 8 km south of Chablis. They recently also purchased vineyards in Chablis, Domaine des Marronniers to complete the range of appellations from this region with wines from Chablis.
