Crystallum Peter Max Pinot Noir is a remarkable Pinot Noir wine produced by the renowned South African winery Crystallum. Peter and Max are the first names of the growers who supplied the fruit for the first vintage of this wine. The fruit sources have since changed, but the name remains to honor the origins of this multi-vineyard Pinot Noir blend. The philosophy here is to use the different batches to form a blend that is more than the sum of its parts.
Crystallum Peter Max Pinot Noir is a light and fruity smooth Pinot Noir. This Pinot Noir is slightly fruity, soft and sweet and shows hints of an enticing savory primal character, along with dark and spicy fruit notes. The wine is aged in barrels for 9 months, then undergoes malolactic fermentation. The grapes from which this wine is made grow in Walker Bay, where there is a cool maritime climate and the soil is stony and rich in clay.
The grapes are harvested manually with strict selection and immediately transported to the vinification room in Gabrielskloof in Botrivier. There, 70% of the grapes are first destemmed while the rest of the bunches are left intact. Subsequently, the grapes are subjected to spontaneous alcoholic fermentation with wild yeasts. After about 4 weeks, pressing follows and the young wine is transferred to French oak barriques (15% new), for malolactic fermentation and maturation. After more than 10 months, the assembly and bottling follows.
