Crystallum Mabalel Pinot Noir is an exquisite and refined wine produced by the renowned South African winery Crystallum. This wine belongs to their premium offering of Pinot Noir and has built an exceptional reputation among wine enthusiasts. Crystallum Mabalel Pinot Noir is named after a poem by the legendary South African Eugene Marais, and tells the story of the daughter of a local chief of the same name who was ambushed while fetching water from the Limpopo River by the crocodile Lalele. The vineyard is planted on the Kaaimansgat farm, meaning the crocodile's lair, where a river flows past the vineyard. The site is 700 meters high and is surrounded by impressive mountains, with peaks often snow-capped in winter.
This South African wine shows off its dramatic terroir intensely. Aromas of sour cherry, plum, black currant, tomato leaf and dark chocolate on the nose lead to a decadent taste of sweet spices, soy and licorice. The distinctive structure is there with ripe tannins and an invigorating, fresh acidity.
The grapes are harvested manually with strict selection and immediately transported to the vinification room in Gabrielskloof in Botrivier. There, the grapes are partly first destemmed and then receive a fourteen-day cold soak in stainless steel tanks. Subsequently, the grapes (of which 10% as whole bunches) are subjected to spontaneous alcoholic fermentation with wild yeasts. After about 14 days, pressing follows and the young wine is transferred to French oak 500 liter barriques (30% new), for malolactic fermentation and maturation. After more than 14 months, the assembly and bottling follows.
