In 1895, Manuel Raventós, the man who made Codorníu great, hired the Art Nouveau architect Josep Puig i Cadafalch (a contemporary of Gaudí) to expand the winery. The building he designed symbolizes the fruitful alliance between nature and human labor and is a tribute in stone to the silence of Cava. The building was declared a National Monument of Historical and Artistic Interest in 1976 and is one of the most impressive examples of architecture serving Cava production. Underground there is a labyrinth of wine cellars, where Codorníu Cavas have been undergoing their second fermentation and maturation at a constant temperature for more than a century now.

In 1872, Josep Raventós Fatjó made Cava for the first time in Spain according to the Méthode Traditionelle, for which he used local grapes from the Penedés: Macabeo, Xarel•lo and Parellada. With this he gave life to a completely new sector in the region and the name Codorníu will forever be linked to the history of Cava. A good Cava is made from high-quality grapes. That is why Codorníu carefully selects its grapes and manages its vineyards with care. The Cava producer has been growing sustainably for years. This means that nature is allowed to take its course and only intervenes if the balance is disturbed. Codorníu thus combines tradition and innovation in the production of Cava, where every step of the process is controlled until the Cava reaches the consumer.
