Chablis AC (Appellation Contrôlée) is the largest appellation in the Chablis wine region in Burgundy, France. The AC designation guarantees that the wine meets certain quality and production standards set out in French wine laws. To be labeled Chablis AC, the wine must be made from 100% Chardonnay grapes grown in the Chablis region, which includes the villages of Chablis, Saint-Bris and Irancy. The wine must also be produced and bottled in the region.

Chablis AC wines are typically unaged or light oak and are known for their crisp, mineral-driven flavor profile. They are usually light to medium bodied with high acidity and have flavors of green apple, citrus and white flowers. The wine is best consumed young, within two to three years of bottling, although some higher quality Chablis AC wines can age for up to five years.

Domaine Lavallée

Domaine Lavallée is a typical family domain, owned by Erick Lavallée from Saint Bris le Vineux. Located just below the city of Auxerre, between the wine regions of Côtes d'Auxerre, Saint Bris, Chablis and Irancy. He makes generous wines, which are well able to represent both grape and soil, and offer a lot of drinking pleasure. And not unimportantly: an excellent price-quality ratio.

His white Côtes d'Auxerre is a beautiful Burgundian Chardonnay, whose taste is somewhere between mineral, fresh Chablis and round, rich Burgundy from the Côte de Beaune. Ripe yellow and white fruit, grass-fed butter, and something floral. Round and mouth-filling, with a long soft finish.

The Aligoté of this house is fresh and mineral, slightly creamy with notes of citrus and green fruit.
