Château Mignan l'Oeil du Temps is almost black in color with ruby red reflections. The wine has a beautiful, complex nose with aromas of hawthorn, licorice, blackcurrant and black fruit balanced with notes of aging. The spacious, concentrated and silky mouth offers a nice fruity substance. It is refined and concentrated with supple tannins, minerals and has a strong intensity leading to a nice long finish.
The grapes are harvested manually, after which the grapes are placed on the sorting table and are completely de-stemmed. Fermentation takes place in wooden barrels for 4 weeks. The wine is then matured in oak barrels of 1 and 2 years old. The wine is bottled manually.
Delicious red French wine suitable with Cote du Boeuf, grilled beef, game, cassoulet and black pudding.

Château Mignan is located in a small and typical southern French village called Siran, in the heart of Languedoc. These exceptional Languedoc wines reflect the terroir made up of calcareous clay and give the wine an incomparable quality. La Livinière is considered the best sub-region in Minervois.
Christian & Carole Mignan and their three children have been passionately managing this castle in the Languedoc for years. Château Mignan consists of 12 hectares of vineyard with 7 hectares in Minervois La Livinière and 5 hectares in Minervois. The wines produced here are a reflection of the terroir of the vines. Only great grape varieties are used: Syrah, Grenache and Carignan for the red wines and for the white wines Marsanne, Roussanne, Grenache Blanc and Rolle are used.
