Château-Fuissé Saint Véran
Château-Fuissé Saint Véran has a bright straw yellow colour. In the nose aromas of grapefruit, peach, pear and wild flowers. The taste palette includes lemon, yellow apple and apricot. The finish is slightly salty, mineral, has a good average length and is accompanied by the right nervous acidity.
At the end of September, the grapes are picked by hand, with a very strict selection. Careful pneumatic pressing of the grapes takes place in the vinification cellar, after which the juice rests for 12 hours to allow coarser components to settle. After this, a spontaneous alcoholic fermentation with wild (grape's own) yeasts is allowed to take place at a controlled temperature. The young wine is then transferred to clean stainless steel tanks to undergo malolactic fermentation and to mature on the lees. After about 6 months, the wine is clarified if necessary, lightly filtered and bottled.
Château Fuissé is located in the heart of the Mâcon, the southernmost part of Burgundy.
