Château Fuissé Pouilly-Fuissé Tête de Cuvée has a clear light golden yellow color. In the nose aromas of lime, peach, pear, something of candied pineapple and almonds. The taste palette includes candied lemon, yellow apple, apricot and a hint of vanilla. The finish has a mineral touch and a nice length with nervous acidity.
The grapes are picked by hand, with a very strict selection. Careful pneumatic pressing of the grapes takes place in the vinification cellar, after which the juice rests for 12 hours to allow coarser components to settle. After this, a spontaneous alcoholic fermentation with wild (grape's own) yeasts is allowed to take place at a controlled temperature. This takes place for 30% in clean stainless steel tanks and for 70% in oak barriques (about a quarter of which are new each year), followed by full malolactic fermentation and maturation on the 'lie'. After more than 1 year, the wine is assembled and if necessary clarified, lightly filtered and bottled.
Château Fuissé is located in the heart of the Mâcon, the southernmost part of Burgundy.
