Château de Beaucastel Chateauneuf-du-Pape Rouge is a deep inky ruby red in colour. In the nose aromas of black currants, blackberries, chocolate, tobacco and garrigue (dried Provencal herbs). In the taste palette notes of very ripe, small black fruit, cherry jam, figs, lavender and thyme, which are followed by a long finish with beautiful soft ripe tannins.
After the manual grape harvest, the grapes are selected, destemmed and vinified separately. After crushing the grapes, a temperature-controlled alcoholic fermentation with wild (grape's own) yeasts is allowed to take place in large oak casks for Syrah and Mourvèdre. For the other grapes, this is done in concrete tanks. After the grapes have been pressed and the young wine has undergone malolactic fermentation in large wooden casks, assembly and subsequent maturation in oak casks follow. After 12 months, it is bottled after very light filtration. This entire process follows biological and biodynamic rules.
