Château Climens Barsac is bright sparkling golden yellow in color. In the nose complex aromas of botrytis, mandarin, dried apricots and a subtle amount of brioche. In the taste palette notes of lime peel, sweet ripe tropical fruit such as pineapple and papaya, honey, something of fresh ginger and vanilla, which are accompanied by beautiful nervous acidity in the salty, sweet and very long lasting aftertaste.
Grapes are literally picked by hand when they are optimally affected by botrytis. In the vinification cellar, after an extremely slow and careful pressing of the grapes, a spontaneous alcoholic fermentation with wild (grape own) yeasts takes place on oak barriques, 40% of which are new. When the desired alcohol content is reached, the temperature is allowed to drop very quickly to 3°C in order to stop the fermentation. Subsequently, the wine receives additional aging in the same barriques for a period of approximately 20 months in order to maximize authenticity and complexity. After this, the wine is not assembled and bottled without clarification or filtering. This process takes place entirely according to biodynamic rules and regulations.
