Castell d’Encus Saktih

Castell d'Encus Saktih is a remarkable wine from Castell d'Encus, a renowned winery located in the Pallars Jussà region, in the province of Lleida, Spain.

Castell d'Encus Saktih has a deep intense dark ruby red color. In the nose aromas of red and black cherries, dried plums, graphite and dried wild herbs. In the taste palette notes of ripe small black fruit, spices and vanilla, accompanied by a very long finish in which the ripe tannins are accompanied by fresh acidity.

With the highly selective manual harvest, the grape bunches are brought to the vinification room in small containers to avoid damage. There the grapes are crushed and allowed to undergo spontaneous alcoholic fermentation with wild (grape's own) yeasts in centuries-old open vats carved into the rock. This is followed by pressing and the young wine is transferred to French oak barriques for malolactic fermentation and maturation. After about two years, the wine is assembled and bottled without fining or filtering. This entire process follows biological principles and regulations.

The wine has a good shelf life and can be up to 15 years old.
