Birds of Paradise Carmenere - Cabernet Sauvignon
Birds of Paradise Carmenere - Cabernet Sauvignon is dark red in color with a fruity nose of ripe strawberries and Betuwe sour cherry. In the background dark chocolate bitters with chili pepper. Silky texture and very soft soothing aftertaste. The tannins give it that little bit of extra hold.
Made from 85% Carmenère and 15% Cabernet Sauvignon grapes from 30 year old sticks. This wine is clearly dominated by the Chilean national grape. Winemaker Alvaro Espinoza turns it into a beautiful elegant wine without any overkill.
Wine - Food pairing
Delicious as an aperitif or as an accompaniment to a classic filet Mignon with green pepper sauce. Venison steak with a red wine sauce tied with that little block of 80% chocolate.
