Sylvain and Didier Defaix make very elegant wines on this domain that exude pure terroir. The wines are almost feminine in character, which may be the influence of wife Hélène (see also Rully in the Châlonnais). The vineyards are worked with exceptional care.
Bernard Defaix's Bourgogne Rouge comes from vineyards located near the town of Auxerre in the Chablis region. At the end of September, the grapes are picked and immediately destemmed and crushed, after which the temperature-controlled (28°C) alcoholic fermentation with wild (grape's own) yeasts is allowed to take place in large stainless steel tanks for more than 2 weeks. This is followed by pressing and the young wine is transferred to oak barriques aged 2 to 3 years for malolactic fermentation and maturation. After about 10 months, the wine is assembled and bottled after light filtration. This entire process follows organic rules and regulations.
