Ashton Hills Pinot Noir Piccadilly Valley is bright deep garnet red in color. In the nose aromas of black cherries, cranberries, violets, rosemary and something of cinnamon and cloves. In the taste palette notes of ripe small red-black fruit, a hint of orange peel, fried bacon and vanilla, accompanied by a velvety aftertaste with ripe tannins and elegant acidity.
The grape bunches are hand-picked at optimum ripeness. In the vinification cellar, the majority of the grapes are very carefully destemmed and, together with the other entire bunches, they first undergo a short cold maceration to obtain more colors of aroma extraction. This is followed by a spontaneous alcoholic fermentation with wild (grape's own) yeasts in stainless steel tanks. Subsequently, the grape must is pressed and the young wine is transferred to French oak barriques to undergo malolactic fermentation and ageing. After 12 months, the wine is assembled and bottled.
Delicious as an aperitif or as an accompaniment to game, lamb or a cheese board with soft cheeses.

Ashton Hills Ashton Hills is a three-acre winery located in the Piccadilly Valley sub-region of the Adelaide Hills, Australia. The vineyards are located on a ridge just below the summit of Mount Lofty, the highest point of the Mount Lofty Ranges. The winery was founded by Stephen George in 1982 and has since built a reputation as one of Australia's finest producers of Pinot Noir and Cool Climate White wines. Stephen George planted his first vineyard at an altitude of 570 meters and with a south-facing view over Mt Lofty. It was the cool climate, one of the coolest in South Australia, that appealed to Stephen. He started planting grape varieties that match this like no other: Riesling, Chardonnay and Pinot Noir.
One clone is not the other. With his fondness for Burgundy, Stephen George understood that all too well. He soon specialized in clone development. Over the past thirty years, he has experimented extensively with no fewer than 25 different Pinot Noir clones. He eventually selected five, which he now uses in his acclaimed Reserve and Estate Pinot Noirs and his sparkling wines. Also, eight carefully cultivated rows of Riesling can be found in the Ashton Hills Vineyard, from which an exclusive and limited Ashton Hills Riesling is made each year.
