The La CinsO wine has a deep ruby red color with purple hues. The color indicates that you are dealing with a young, lively wine. The La CinsO from Domaine Anne Gros & Jean-Paul Tollot comes from a 50-year-old vineyard covering 1 hectare. After manual picking, the Cinsault grape bunches are selected, destemmed and lightly crushed. After a short soaking time, temperature-controlled alcoholic fermentation with wild (grape's own) yeasts takes place in stainless steel tanks. About three weeks later, the grapes are pressed and the young wine is transferred to clean stainless steel tanks to undergo malolactic fermentation and mature. After 12 months, the wine is assembled and bottled without fining or filtering.
