A. Cailbourdin Pouilly-Fumé Les Cris

This is a completely different type of Pouilly-Fumé than the "Les Cornets". Here, elegance and refined minerality predominate. For Les Cris Pouilly-Fumé, the grapes are harvested on a plot with a typical "Caillottes" soil of limestone and pebbles. The 20-30 year old vines face southwest, making ripening ideal. In contrast to Les Cornets, this wine is already open and expressive in its youth, with aromas of citrus fruit, pineapple and peach, supplemented with mineral notes. After 1 to 2 additional years of bottle age, the aromas evolve into full, complex mineral nuances. On the tongue the attack is tight, powerful and very rich, mouth-filling and perfectly balanced, with a very long finale as an encore.

In the cellars, work is done in the stainless steel tanks and during bottling under neutral, protective conditions to avoid any form of premature (negative) oxidation. The grapes are pressed pneumatically immediately upon arrival. After natural clarification, the must is allowed to ferment spontaneously to emphasize the terroir character. No malolactic fermentation takes place. The young wine matures for about a year on its own 'lie' (fine sediment) and is bottled the year after the harvest.

This white wine is perfect as an aperitif or with light dishes such as seafood, salads, goat cheese and grilled fish. It also goes well with Asian dishes and light pastas.
